All you need are fresh veggies and a packet of MiniMixes Piri Piri seasoning. You can use the veggies I used here, or even pick your own! The MiniMixes Piri Piri packet is really what makes this recipe special, so I've tried a few variations when I have some vegetables that need to be used.


Ingredients:

  • 1 medium sweet potato, peeled and diced

  • 2 large carrots, peeled and sliced

  • 1 bell pepper, seeds removed and sliced

  • 1/2 red onion, peeled and sliced

  • 1 MiniMixes Piri Piri packet

  • Lemon, for juicing


Directions:

  1. Preheat the oven to 160°C. In a large bowl, mix together the MiniMixes Piri Piri packet, lemon juice, and vegetables. Toss around until well coated.

  2. Spray roasting tin with cooking spray, then add vegetables.

  3. Cover tin with foil and cook in the oven for 30 minutes. Remove foil, increase oven temperature to 200°C. Toss vegetables.

  4. Return to oven for 15 minutes, or until soft and starting to caramelize.

  5. Serve!
